Pancakes from Scratch with Pairings & Assembles
Let’s get one thing straight -- I grew up with breakfast being cereals, pancakes, pop-tarts, doughnuts and all things super sugary. I can shed the craving for almost all of them, except pancakes. The happiness of a good, maple syrup soaked pancake melting in the mouth is one of those moments closest to heaven. Am I sad there’s no IHOP here? Yes. Did I do something about it - yes. I started mixing pancakes from scratch at home, and flipping them on Sunday mornings with just the right music. Coffee would brew on the side, escaping in strong bitter aroma swirls and maybe, for a split second, it felt like I was at IHOP or Barnes & Nobles. Ditch the store bought pancake mix and make them fresh each time. I love topping up the pancakes with different flavors and experimenting a little too. Here’s how: Ingredients for Pancakes from Scratch All purpose flour - 1.5 cups Milk - 1.75 cupsÂ
Butter - 4 tbsp (unsalted)
Eggs - 1
Sugar - 1 tbsp (powdered)
Baking powder - a pinchÂ
Salt - two pinches
Method:
Sift into a mixing bowl the flour, powdered sugar, pinches of salt, and the baking powder
Mix these dry ingredients together and then slowly add 3tbsps of melted butter. Crack open an egg, add to the mixture and start whiskingÂ
Whisk smoothly and slowly add in milk (it helps if milk is at room temperature and is of the creamier, thicker quality)Â
If the mixture is too thick, compensate with more milkÂ
Pour small ladles of the batter onto a skillet / pan over low-medium heatÂ
Flip when you see bubbles on top, flip again when the sides are browned and ready

Store-bought pancake batter and maple syrup is just so expensive and unnecessary when you’re whipping good old pancakes almost every other week. I figured out some combinations that play with different ingredients that compensate quite well for maple syrup. Read on to find your pick.
Classic Pancake with Vanilla Honey
Ideally, I would’ve liked to add actual vanilla beans in honey and steep the thing for a while but I do not have that kind of access nor that kind of time. So I just add vanilla essence into the pancake batter or the honey itself and it works just fine. Now that that's over with, you've got your pancakes from scratch and now you can top it off with some iconic combinations depending on the mood you're going for!
